Great camp, cabin and RV soup recipe tested by the ultimate outdoorsmen! This recipe was developed for two forest rangers with limited provisions and storage and taken from The Lookout Cookbook, 1938. U.S. Forest Service, Region One.
Ingredients:
- 1 cup soaked beans
- 1 quart water
- "a little soda "
- "a little minced onion "
- salt and pepper to taste
- 2 thin slices bacon
Preparation:
Soak 1 cup of beans overnight in 1 quart of water. In the morning place in a pot on the stove, add a little soda and cook 1/2 hour, then drain. Add fresh water, a little minced onion (onion chopped up fine), salt, pepper and 2 thin slices of bacon, diced. Cook 2 1/2 hours or until the beans are soft.
